Difference between the v0.5.1 tag and the branch is that the branch contains CI fixes/small improvements for a maintenance release.
Should have no difference for building locally. Take branch id say.
Slowness on start? Could have look at the logs.
Maybe just try running ./freeorion directly from the build directory to see if there is a difference
The files you copied look sensible to me; I dont think you need anything else - but i didnt try.
It may well be that performance got worse since 0.4.x
